We have a muffin for breakfast every morning, so needless to say, I make a lot of muffins. People would rave when I gave them a muffin, and I used to think “what’s the big deal, it’s just a muffin?” But then a few summers ago in a heat wave, when I did not have air conditioning, and I did have a gas oven that gave off a lot of heat, I didn’t want to turn on that oven so I had to forgo my normal home made muffins for breakfast. I had to resort to muffins from the grocery store, and I realized why people were raving about my muffins!
While I like muffins for breakfast, they also make a great snack. Generally muffins (the home made variety anyway) are lower in fat and sugar than cakes or cookies, and also often contain good-for-you ingredients like whole grains and fruits. According to Wikipedia, the commercialization of muffins in the 1970s and 1980s also led to the increase in fat and sugar in the commercial varieties, to increase their shelf life. That explains my bad experience with grocery store muffins!
Muffins are very quick and easy to make, and there are countless recipes to suit any taste. I freeze leftover muffins and just take one out and heat it in the microwave as needed – so I can have a fresh warm delicious muffin in about a minute.
